A deleted item offers Undo right away — tap Undo on the message at the bottom and it comes back, reminder included.
A deleted list works the same way: tap Undo on that message and the list comes back, with still-active reminders: future one-time reminders and repeating reminders (they continue from the next time they are due). A one-time reminder that already passed stays on the list but is not scheduled again. After the message goes away, restore a backup (Settings → Data & Backup → Restore from a backup).
Recreate the two starter lists any time in Settings → Starter lists: choose Create latest Read me first or Create latest Sample list. Create the starter lists is also offered when the home screen is empty.
Checking off does not delete an item — tap the circle to uncheck. Deleting checked items is a separate action.
